What are Micro Herbs?

 

​Micro herbs (also called “micro greens”) are the tiny seedlings of normal adult plants, harvested only a week or two after germination, when the very first shoots and leaves have grown through

​

Small in size but large on flavour, the delicate form and intense taste of micro herbs (also known as micro leaves) are harvested at just over 2cm in height, known as the first ‘true leaf’ stage.  


The combination of subtle tenderness, strong flavour and their unique visual appearance make micro herbs an attractive and healthy addition to any meal.

These tender young leaves have a more intense flavour than

their parents and make the perfect addition to salads or add

a glamourous garnish to any dish.

From familiar varieties such as cress or pea shoots, to exotics such as red amaranth, purple basil and red mustard frills, micro herbs make an excellent and nutritious accompaniment to the most mundane meals.


Top restaurants have used tender, nutrient-dense micro herbs for years because they are pretty, tasty and add great texture to any dish.

How to use Micro Greens

 

You can use micro herbs to top anything, from roasted vegetables to pizza. You can also eat them as salads, or add to sushi, wraps, and sandwiches.


Unlike sprouts, where you eat the seed, root, stem and underdeveloped leaves, micro herbs stems are cut, so you eat the baby leafy foliage that is bursting taste and vitamins.

From peppery, to mild and subtle, micro herbs add punchy flavours and vibrant colours to vegetable or bean salads, pilafs, soups, baked potatoes, stir-fries and pizza. You can also blend micro herbs into dips, dressings, pesto and sauces.


 

Try tossing micro herbs with thinly sliced radishes and celery, then dress simply with a rice wine and olive oil vinaigrette.  Or try micro herbs as salads or added to sushi, sandwiches and wraps.

Always use fresh micro herbs raw, to preserve their delicate flavour and nutrients!

HOW TO STORE YOUR MICRO HERBS

​

Your micro herb will keep well if stored properly. Store micro herbs between damp paper towels, make sure they are cold and keep them covered in a re-sealable bag or container.  This way, they should last in the fridge for about a week.

 

To ensure your micro greens don't wilt or dry out during service, keep your them well covered until they hit the plate!
