Juicy Cranberry Sauce

for a Jolly Christmas!

Add 100g light muscovado sugar to 100ml orange juice (fresh or from a carton) in a pan and bring to the boil. Stir in 250g fresh or frozen cranberries and simmer 5 - 10 minutes until tender but still whole. The sauce will thicken as it cools.
Will keep refrigerated for a week.
Bring to room temperature before serving.
SPRING INTO SUMMER
Use a sharp paring knife to make a large “X” through the skin on the flat side of each chestnut, then place, round side down, on a baking sheet. Roast in a pre-heated oven around 30 minutes, until the skins peel back away from the chestnut. Don't worry if some refuse to open.

Allow the chestnuts to cool until they are cool enough to handle, but they are still warm, otherwise they will be difficult to peel. Use your hands to peel the skin and the soft inner skin away from each nut. You may need to use the knife to help remove it. If nuts cool down too much before peeling, warm them in the oven again for a few minutes, to help loosen the skins again.
HOW TO ROAST
CHESTNUTS
BRAISED RED CABBAGE WITH APPLES
Soften a large, thinly sliced onion in a tablespoon of olive oil with a clove of crushed garlic and a Gala apple, cored and sliced. Stir in a head of red cabbage, cored, quartered and finely sliced. Add 1-3 tablespoons each of honey and apple cider vinegar, 1/4 teaspoon ground cinnamon, 1/4 teaspoon ground cloves, 1/4 freshly grated nutmeg and a handful of sultanas. Stir until heated through, then cover, reduce heat and simmer 25-30 minutes, or until soft.

Great with turkey, venison, goose or pork and can be made a couple of days in advance too. Enjoy!
